  • 1/4 cup chopped fresh coriander leaves
  • 1/4 cup chopped fresh mint leaves
  • 2 tbsp ghee
  • 2 tbsp vegetable oil
  • 3 cups water

Instructions:

  1. Rinse the rice thoroughly until the water runs clear, then soak it in water for at least 30 minutes.
  2. Heat the ghee and oil in a large pan or Dutch oven over medium heat.
  3. Add the sliced onions and fry until they turn golden brown. Remove the onions with a slotted spoon and set them aside on a paper towel to drain excess oil.
  4. In the same pan, add the whole spices (cardamom pods, cloves, bay leaves, and cinnamon stick) and sauté for a minute until fragrant.
  5. Add the ginger and garlic paste and fry for another minute.
  6. Add the mutton pieces and fry them for 5-7 minutes until they are browned on all sides.
  7. Add the yogurt, red chili powder, cumin powder, coriander powder, turmeric powder, garam masala powder, and salt. Mix everything together until the mutton pieces are coated with the spices.
  8. Add 1 cup of water and stir everything together. Cover the pan and let the mutton cook over medium heat for about 30 minutes until it is tender and cooked through.
  9. While the mutton is cooking, bring 3 cups of water to a boil in a separate pot. Add the soaked rice and cook for about 10 minutes until the rice is partially cooked. Drain the rice and set it aside.
  10. Preheat your oven to 350°F.
  11. In a large baking dish or Dutch oven, layer the partially cooked rice, cooked mutton, fried onions, chopped coriander leaves, and chopped mint leaves. Repeat the layers until all the ingredients are used up.
  12. Cover the dish tightly with foil or a lid and place it in the preheated oven for 20-25 minutes until the rice is fully cooked and fluffy.
  13. Remove the dish from the oven and let it rest for a few minutes before serving.
